Sweet & Sour Cabbage Rolls

Ingredients

  • 1 large head cabbage, cored
  • Sauce:
  • 2 onions, chopped
  • 1- 28 oz can tomatoes
  • 1/3 cup brown sugar
  • 1-15oz can tomato sauce
  • 1/3 cup lemon juice
  • 1 tblsp soy sauce
  • 1/4 tsp cayenne
  • 1/3 cup raisins
  • Filling:
  • 2 cups brown rice, cooked
  • 1/2 lb. cooked ground turkey
  • 1/2 cup onion, diced
  • 1 egg white, fork beaten
  • 1 tsp ea. Basil and thyme
  • 1 tblsp soy sauce
  • 1 tsp dill weed
  • 1 1/2 cups chopped celery
  • 1/2 cup green pepper, chopped
  • 1 cup cooked barley

Instructions

  1. Set the cabbage core side down in steamer over boiling water, covered, for about 10 min.
  2. Separate leaves.
  3. Sauce: Prepare sauce by sautéing onions in 1/2 cup water in large skillet. Cook until water is evaporated and onions are lightly browned.
  4. Add rest of sauce ingredients, bring to boil and simmer 10 min.
  5. Filling: Mix all ingredients. Place 1/3 cup filling in each cabbage leaf. Tuck in and roll up carefully.
  6. Arrange rolls seam side down in large baking pan (9x13) and pour sauce over and around the rolls.
  7. Bake covered in 350 degree oven for 1 1/4 hours.

Ingredients

  • 1 lb. ham slice, cut into 1" pcs.
  • 2 cups green beans, cut into 1" pcs.
  • 2 cups potatoes, sliced
  • 2 cups cheddar cheese, grated
  • 2 onions, med, sliced
  • 1 can mushroom soup, condensed
  • Salt
  • Pepper

Instructions

  1. Layer half of the ham, potatoes, green beans, onions, cheese in large crockpot; sprinkle with salt and pepper.
  2. Repeat layer, and spoon mushroom soup over top.
  3. Cook on low 6-8 hours.

 

Bubba’s Fajitas

Ingredients

  • lb skirt steak (or cut of your choice)
  • 1 garlic clove, chopped
  • 1 teaspoon cumin
  • 1 tablespoon chopped fresh cilantro
  • 1⁄3 cup Worcestershire sauce
  • 1⁄4 cup light soy sauce
  • 1 teaspoon liquid smoke
  • 1 medium yellow onion, sliced into rings
  • 1 large ime juice
  • pepper
  • 1 large green pepper, sliced into strips
  • 1 large yellow pepper, sliced into strips

Instructions

  1. Trim fat from steak. Pound lightly to tenderize. Place meat in non-metallic container. Top with onion rings.
  2. Combine garlic, cumin, cilantro, Worcestershire sauce, soy sauce, liquid smoke, lime juice and pepper. Pour over meat and onions. Cover and refrigerate overnight.
  3. Remove meat and onions reserving marinade. Place meat on a grill, basting and turning often. When the meat is done, slice it into thin strips across the grain.
  4. Meanwhile, saute the onions and peppers in butter.
  5. Serve with your choice of refried beans, rice, guacamole, salsa, sour cream, cheese on warm flour tortillas.
  6. Can also substitute chicken for the steak.

 

Chicken Scampi & Linguine

Ingredients

  • 1 lb. linguine
  • 2 chicken breasts, whole
  • 1/4 cup butter
  • 1/4 cup oil
  • 2 garlic cloves, minced
  • 2 bunches broccoli, chopped
  • 1 red pepper, large, cut into 1" pcs.
  • 1 tsp salt
  • 2 lemons, juice of
  • parmesan cheese

Instructions

  1. Put water on for the linguine.
  2. Bone chicken and cut into 1" pcs.
  3. Heat butter & oil in wok or large skillet and saute chicken until golden, adding garlic in at the end of the chicken cooking and saute 1 minute.
  4. When water comes to a boil, cook linguine and drain; keep in strainer.
  5. Add broccoli and red pepper. Cook to desired doneness, crisp-tender.
  6. Season with salt and pepper, sprinkle with lemon juice and cook 2 min.
  7. Arrange pasta on plate and add vegetable meat mixture on top.
  8. Serve with parmesan cheese.

Ingredients

  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 ribs celery, chopped
  • 2 teaspoons vegetable oil
  • 2 large turkey wings
  • 2 tablespoons cold water
  • 10 cups cold water
  • 4 sprigs fresh thyme
  • 3 tablespoons butter
  • 1/2 cup all-purpose flour
  • salt and ground black pepper to taste

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Combine onion, carrots, celery, and vegetable oil in a large roasting pan and toss to coat. Place turkey wings on top of vegetables
  3. Cook until the turkey wings are browned and vegetables are caramelized and softened, 45 to 60 minutes.
  4. Transfer turkey wings and vegetables to a large stockpot. Place the roasting pan over a stovetop burner on medium heat. Pour 2 tablespoons cold water into the pan and bring to a boil, scraping up any browned bits. Transfer mixture to the stockpot and add 10 cups cold water, thyme, and garlic.
  5. Bring turkey wing mixture to a boil. Reduce heat to low and simmer, uncovered, until meat falls off the bone, about 3 hours. Skim off turkey fat throughout the process and set aside 2 tablespoons.
  6. Strain turkey stock and reserve 6 cups of stock; discard all the solids.
  7. Heat butter and 2 tablespoons reserved turkey fat in a large saucepan over medium heat. Sprinkle in flour and cook, whisking continuously, until it begins to smell like cooked pie crust, 2 to 3 minutes. Slowly pour in turkey stock, whisking continuously. Increase heat to high and simmer until thick and warmed through, about 5 minutes. Season with salt, black pepper, and cayenne pepper to taste.

 

Mac & Cheese in Crockpot

  • 3 Cups Shredded Cheddar Cheese
  • 2 1/2 Cups Milk
  • 12 oz. Evaporated Milk
  • 8 ounces Cream Cheese
  • 16 ounces elbow Macaroni

Instructions

  1. Put All ingredients into the Crock Pot, EXCEPT the 1 pound bag of Macaroni noodles!
  2. Leave on Low for an hour. After 1 hour, stir the sauce in crock pot.
  3. Make Macaroni & then Drain after sauce has been “crock potting” for about 45 minutes.
  4. Add Cooked Macaroni to sauce after drained.
  5. Cook on LOW another 45 minutes

  • 3 eggs
  • 1/2 cup ricotta cheese
  • 2 tbsp. cream cheese, softened
  • 3 tbsp. coconut flour 1 tbsp. protein powder
  • 1 tsp baking powder
  • pinch baking soda
  • butter

Instructions

  1. Mix dry ingredients; cream together ricotta and cream cheeses; mix together. Whisk eggs until frothy. Mix in remaining ingredients until smooth. Melt butter on hot griddle. Pour 1/4 of batter on griddle for pancakes. Makes about 8 four inch pancakes.

  • 6 eggs
  • 1/2 cup milk
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 cup shredded Cheddar cheese (4 oz.)
  • 3/4 cup chopped zucchini
  • 1/4 cup chopped red bell pepper
  • 2 Tbsp. chopped red onion

Instructions

  1. HEAT oven to 350°F. BEAT eggs, milk, salt and pepper in medium bowl until blended. ADD cheese, zucchini, bell pepper and onion; mix well. SPOON evenly into 12 greased muffin cups, about 1/4 cup each.
  2. BAKE in 350°F oven until just set, 20 to 22 minutes. COOL on rack 5 minutes. REMOVE from cups; serve warm.
  3. Make these ahead and reheat in the microwave for a quick breakfast.

  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 3⁄4 cup milk

Instructions

  1. In a mixing bowl, combine dumpling ingredients and mix well to form a stiff dough.
  2. Drop by tablespoonfuls into simmering soup.
  3. Cover and simmer for 15 to 20 minutes.
  4. Serve immediately.
  5. Yield: 4 to 6 servings.

 

Banana Cream Pie

  • ¾ cup graham cracker crumbs
  • ¾ cup pretzel crumbs
  • ¼ cup sugar
  • ⅓ cup butter, melted
  • FILLING:
  • 3-4 bananas, sliced
  • ¾ cup sugar
  • ¼ cup cornstarch
  • ¼ t salt
  • 3 cups milk
  • 3 egg yolks, slightly beaten
  • 2 t vanilla
  • 2 T butter

Instructions

  1. Preheat oven to 375°. In a food processor, turn your graham crackers and pretzels into crumbs. Add sugar and melted butter, mix until combined. Press into an ungreased pie pan and bake for 8-10 minutes and allow to cool.
  2. In a medium saucepan, combine sugar, cornstarch, salt. Add milk and stir until dry ingredients are dissolved. Cook over medium heat, stirring constantly, until your pudding thickens and begins to boil. **This takes 15-20 minutes and you really need to babysit this mixture to keep it from burning on the bottom**
  3. Once your pudding has started to boil, add a small spoonful of it to the beaten egg yolks, blend quickly. Add the yolks to your pudding, stirring constantly and remove from heat.
  4. Add vanilla and butter, mix well.
  5. Arrange your first layer of sliced bananas on the cooled crust.
  6. Top with half of the pudding mixture.
  7. Arrange a second layer of sliced bananas on the pudding.
  8. Cover with the remaining pudding. Refrigerate for at least 3 hours.
  9. Top with whipped cream and more bananas!
