Ingredients

  • 2 sweet potatoes, cut into French fries
  • 1.5 tablespoons olive oil
  • 1 tablespoons taco seasoning mix or Tony Chacheres
  • ¼ teaspoon cayenne pepper

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. In a plastic bag, combine the sweet potatoes, oil, seasoning, and cayenne pepper. Close and shake the bag until the fries are evenly coated. Spread the fries out in a single layer on a large baking sheet.
  3. Bake for 30 minutes, or until crispy and brown on one side. Turn the
    fries over using a spatula, and cook for another 30 minutes, or until
    they are all crispy on the outside and tender inside. Thinner fries may
    not take as long.

Ingredients

  • 2 (14.5 ounce) cans chicken broth
  • 2 (15 ounce) cans whole kernel corn
  • 4 slices bacon
  • 1 large white onion, diced
  • 3 cups diced potatoes
  • 2 (12 fluid ounce) cans evaporated milk
  • ⅓ cup butter
  • salt and pepper to taste

Instructions

  1. Cook bacon slices and crumble.
  2. In a large pot over medium heat, combine broth, corn, onion and
    potatoes. Bring to a boil, then reduce heat, cover and simmer 15 to 20
    minutes, until potatoes are just tender; add bacon crumbles.
  3. Stir in evaporated milk and butter until butter is just melted. Season with salt and pepper and serve at once.

Ingredients

  • 1 onion, chopped
  • 1 1/2 cups potatoes, mashed
  • 1 cup flour
  • 1 egg
  • salt to taste
  • pepper to taste
  • 2 tablespoons frying oil

Instructions

  1. Mix all ingredients until incorporated.
  2. Drop unformed large serving spoonfuls into heated oil; fry on one side until golden brown.
  3. Flip cakes over and press flat with spatula.
  4. Brown second side.

Ingredients

  • 1 tablespoon olive oil
  • 4 sweet potatoes
  • sea salt to taste
  • 1/4 cup unsalted butter
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 teaspoon salt
  • 1 pinch cayenne pepper, or more to taste
  • ground black pepper to taste
  • 1 cup mini marshmallows

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  2. Rub olive oil onto the outside of each sweet potato and sprinkle sea salt over each. Arrange sweet potatoes on the prepared baking sheet.
  3. Bake in the preheated oven until a sharp knife easily pierces the potato, 50 to 60 minutes. Cool sweet potatoes until easily handled, 10 to 15 minutes.
  4. Melt butter in a saucepan over medium heat until solids begin to brown and smell nutty, 5 to 8 minutes.
  5. Slice potatoes in half lengthwise and scoop insides into a large bowl. Add browned butter, cream cheese, 1/2 teaspoon salt, cayenne pepper, and black pepper and mash using a potato masher until smooth. Spoon mixture back into the sweet potato skins and top each with 1/4 cup marshmallows. Place sweet potatoes back onto the baking sheet.
  6. Bake in the oven until warmed through and marshmallows are toasted, about 10 minutes.

Sweet Potato Creamy Casserole

Ingredients

  • 3 medium sweet potatoes
  • 1/4 cup softened butter
  • 1/4 cup light brown sugar
  • 1/4 cup milk
  • 1 egg
  • 1/2 tsp. vanilla
  • For the topping:
  • 1/4 cup light brown sugar
  • 1/4 cup chopped pecans
  • 1 tblsp. all-purpose flour
  • 1 tblsp. softened butter

Instructions

  1. Place the potatoes in a deep pot with enough water to cover by 1 inch. Bring to a boil and cook 40-45 minutes or until tender. Remove the potatoes from the water and allow them to cool enough to handle. Peel the potatoes, place in a mixing bowl and mash.
  2. Preheat the oven to 350 degrees. Generously butter a baking dish.
  3. To the mashed sweet potatoes, add the softened butter, light brown sugar, milk, egg, and vanilla. Beat at medium speed with an electric mixer until smooth. Spread into the prepared baking dish.
  4. In a small mixing bowl, combine the ingredients for the topping. Sprinkle evenly over the sweet potato mixture.
  5. Bake for 30 minutes.

  • 8 medium sweet potatoes
  • 1/3 cup packed brown sugar
  • 1/4 cup butter
  • 1/2 teaspon salt
  • 3/4 cup tiny marshmallows

Instructions

  1. Wash and cut up sweet potatoes into large chunks and cook in boiling water until just tender. Drain, peel and cut into 1/2 inch thick slices.
  2. In a 1 1/2 qt. casserole, layer half each of the potatoes, brown sugar, butter, and salt. Repeat layers.
  3. Bake, uncovered, in a 375 degree oven 30-40 minutes or till glazed. Sprinkle marshmallows over top. Bake about 5 minutes longer or till lightly browned.

Ingredients

  • 2 cups potatoes, peeled, shredded
  • 1/2 lb. cooked ground turkey
  • 2 tblsp green onions, chopped with tops
  • 1 1/2 tblsp flour
  • Pinch salt
  • 2 eggs, lightly beaten
  • Cooking oil

Instructions

  1. Drain and pat dry shredded potato.
  2. In a large bowl, combine cooked turkey, onion, flour and salt. Stir in eggs until blended. Add reserved potatoes; toss to coat.
  3. Add 2 tblsp oil in large skillet over medium heat. Drop mixture in 1/3 cup batches and fry until golden brown; drain on paper towels.

Ingredients

  • 4 large baking potatoes
  • 1/4 cup melted butter (plan on 1 Tbs per potato)
  • 1 tsp coarse sea salt
  • 2-3 Tbs chopped fresh herbs (or 2-3 tsp dried):
  • try basil, thyme, oregano, chives, or Italian seasoning
  • 1/4 cup fresh grated Parmesan (other cheeses would be good as well)

Instructions

  1. Wash and dry potatoes; peel if desired. Cut into thin slices, but not all the way through the potato (use the handle of a wooden spoon placed alongside the potato to prevent cutting all the way through). Place potatoes in a baking dish. Sprinkle with butter, salt and herbs, getting some between each slice.
  2. Bake at 400°F for 45 minutes, or until potatoes are cooked through. Once or twice during cooking, spoon melted butter from the bottom of the pan over potatoes. Top with cheese and bake an additional 10 minutes.

  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon Tony Chachiere's
  • salt and pepper to taste

Instructions

  1. Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Toss potatoes with brown sugar, olive oil and spices. Grill directly on grill until browned and tender.
