Ingredients

  • 1 lb ground turkey
  • 1 small onion, diced
  • 2 garlic cloves, diced
  • 1 14 oz can diced tomatoes
  • 1 14 oz can tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 8 oz cooked macaroni
  • 1/2 teaspoon salt
  • mexican cheese blend, grated

Instructions

  1. Cook macaroni according to box directions.
  2. Brown ground turkey. When it is half done, add onion. When onion is almost done, add garlic and saute one minute.
  3. Add diced tomatoes and sauce, stir, then add chili powder and cumin.
  4. Add macaroni and salt.
  5. Serve with grated cheese.

Ingredients

  • 1 acorn squash
  • 1/2 pound ground turkey
  • 1 small onion
  • 4 oz mushrooms
  • Parmesan cheese block
  • 1/2 tsp Italian seasoning
  • 1 tsp minced garlic
  • 1/4 tsp rubbed sage
  • 1/4 tsp fennel
  • 1/8 tsp black pepper
  • 1/2 tsp paprika
  • red pepper flakes (optional)
  • 3/4 tsp salt
  • olive oil

Instructions

  1. Preheat oven to 400 degrees.
  2. Split the acorn squash by trimming the “point” and stem off just enough to create a flat side. Then half the acorn squash to create two circle halves.
  3. Place halves on baking sheet pan, drizzle with a little olive oil, sprinkle with salt. Bake in oven for 30 minutes.
  4. While squash cooks, prepare meat mixture. Heat 1 tbs olive oil over medium to high heat in large skillet.
  5. Add ground turkey meat to pan. Season pan with all the seasonings and 1/2 tsp of salt. Break up meat and stir.
  6. While meat cooks, chop onions, add to meat pan. Then chop mushrooms and add to meat pan.
  7. Season veggies with another dash of salt.
  8. Cook all together until veggies are soft and meat is done.
  9. Once squash is finished in oven, divide the meat mixture between the 2 squash halves. Sprinkle each with parmesan cheese.
  10. Return back into oven. Bake an additional 10 minutes.
  11. Optional topping: Drizzle with a little traditional balsamic vinegar or Espresso Balsamic.

Ingredients

  • 1 lb. turkey, ground
  • 2 cups bread crumbs
  • 1 egg, lightly beaten
  • 1 cup onions, chopped
  • 1 cup celery chopped
  • 1 cup pepper, chopped
  • 3/4 cup carrots, finely chopped
  • 1/2 cup evaporated milk
  • 1/2 cup tomato juice
  • 2 teaspoons thyme, ground

Instructions

  1. Place all the loaf ingredients in a large bowl and mix thoroughly. Shape into two loaves on a lightly greased 10x14 inch pan. Cover the pan with foil shaped into a tent and bake at 400 degrees for 30 minutes. Remove the pan from the oven and spread some ketchup over the top of the loaves. Return the loaves to the oven and bake for 30 more minutes.

  • 2- 16 oz can small red beans
  • 1# ground turkey
  • 1 28oz can whole tomatoes
  • 1 16 oz can tomato sauce
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 green bell pepper, chopped
  • 1 tbsp brown sugar
  • 1 tbsp chili powder
  • chili flakes for extra heat (optional)

Instructions

  1. Brown turkey in oil until almost done; add onion and green pepper and saute until onion is clear.
  2. Add garlic and cook 1 minute.
  3. Add whole tomatoes, cutting up tomatoes until bite sized; add tomato sauce, brown sugar, chili powder and chili flakes, and simmer 15 minutes.
  4. Add drained rinsed beans and heat through.

Ingredients

  • 2 cups potatoes, peeled, shredded
  • 1/2 lb. cooked ground turkey
  • 2 tblsp green onions, chopped with tops
  • 1 1/2 tblsp flour
  • Pinch salt
  • 2 eggs, lightly beaten
  • Cooking oil

Instructions

  1. Drain and pat dry shredded potato.
  2. In a large bowl, combine cooked turkey, onion, flour and salt. Stir in eggs until blended. Add reserved potatoes; toss to coat.
  3. Add 2 tblsp oil in large skillet over medium heat. Drop mixture in 1/3 cup batches and fry until golden brown; drain on paper towels.

Ingredients

  • 1 large head cabbage, cored
  • Sauce:
  • 2 onions, chopped
  • 1- 28 oz can tomatoes
  • 1/3 cup brown sugar
  • 1-15oz can tomato sauce
  • 1/3 cup lemon juice
  • 1 tblsp soy sauce
  • 1/4 tsp cayenne
  • 1/3 cup raisins
  • Filling:
  • 2 cups brown rice, cooked
  • 1/2 lb. cooked ground turkey
  • 1/2 cup onion, diced
  • 1 egg white, fork beaten
  • 1 tsp ea. Basil and thyme
  • 1 tblsp soy sauce
  • 1 tsp dill weed
  • 1 1/2 cups chopped celery
  • 1/2 cup green pepper, chopped
  • 1 cup cooked barley

Instructions

  1. Set the cabbage core side down in steamer over boiling water, covered, for about 10 min.
  2. Separate leaves.
  3. Sauce: Prepare sauce by sautéing onions in 1/2 cup water in large skillet. Cook until water is evaporated and onions are lightly browned.
  4. Add rest of sauce ingredients, bring to boil and simmer 10 min.
  5. Filling: Mix all ingredients. Place 1/3 cup filling in each cabbage leaf. Tuck in and roll up carefully.
  6. Arrange rolls seam side down in large baking pan (9x13) and pour sauce over and around the rolls.
  7. Bake covered in 350 degree oven for 1 1/4 hours.

Ingredients

  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 ribs celery, chopped
  • 2 teaspoons vegetable oil
  • 2 large turkey wings
  • 2 tablespoons cold water
  • 10 cups cold water
  • 4 sprigs fresh thyme
  • 3 tablespoons butter
  • 1/2 cup all-purpose flour
  • salt and ground black pepper to taste

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Combine onion, carrots, celery, and vegetable oil in a large roasting pan and toss to coat. Place turkey wings on top of vegetables
  3. Cook until the turkey wings are browned and vegetables are caramelized and softened, 45 to 60 minutes.
  4. Transfer turkey wings and vegetables to a large stockpot. Place the roasting pan over a stovetop burner on medium heat. Pour 2 tablespoons cold water into the pan and bring to a boil, scraping up any browned bits. Transfer mixture to the stockpot and add 10 cups cold water, thyme, and garlic.
  5. Bring turkey wing mixture to a boil. Reduce heat to low and simmer, uncovered, until meat falls off the bone, about 3 hours. Skim off turkey fat throughout the process and set aside 2 tablespoons.
  6. Strain turkey stock and reserve 6 cups of stock; discard all the solids.
  7. Heat butter and 2 tablespoons reserved turkey fat in a large saucepan over medium heat. Sprinkle in flour and cook, whisking continuously, until it begins to smell like cooked pie crust, 2 to 3 minutes. Slowly pour in turkey stock, whisking continuously. Increase heat to high and simmer until thick and warmed through, about 5 minutes. Season with salt, black pepper, and cayenne pepper to taste.

  • 1 pound ground turkey
  • 3 tablespoons scallions, chopped
  • 2 tablespoons soy sauce, low sodium
  • 1/2 teaspoon garlic powder

  • 1 medium red onion
  • 2 teaspoons olive oil

Instructions

  1. Cut onion into grillable slices. In bowl, combine turkey, scallions, soy sauce, garlic powder, parsley and seasoned pepper. Shape into 4 patties. Brush burgers and onions with olive oil. Grill burgers about 5 minutes on each side, or until thoroughly cooked. Grill onions until desired doneness. Place burgers in buns and add grilled onion.

  • 1/4 cup wine

Instructions

  1. Saute turkey until almost done; add onion and bell pepper, cook until onion is translucent.
  2. Place remaining ingredients in electric pressure cooker, lock lid and set for 15 minutes on low pressure. When done, set to quick release.

  • 2 teaspoons kosher salt

  • 1 1/2 teaspoons ground thyme
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Mix turkey, brown sugar, salt, black pepper, sage, thyme, marjoram, and red pepper flakes in a bowl. Shape turkey mixture into patties.
  2. Fry patties in a large skillet over medium-high heat until golden brown and no longer pink in the center, 6 to 8 minutes.
