Pumpkin Nut Bread

Ingredients

  • cooking spray
  • 1/2 cup unsalted butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 1 (15 ounce) can pumpkin puree
  • 1/2 teaspoon cinnamon 
  • 1/8 teaspoon allspice
  • 2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 cup walnuts, chopped

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. Spray a 9x5-inch loaf pan with cooking spray.
  3. Mix butter and sugar in a large bowl until light and fluffy.
  4. Whisk in eggs one at a time until combined.
  5. Whisk in the pumpkin puree, cinnamon, and allspice until combined.
  6. Stir flour, salt, baking powder, and baking soda into the pumpkin mixture and mix until just combined. Stir in chopped walnuts.
  7. Pour batter into the prepared loaf pan.
  8. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.
