Ingredients

  • 1 pound fresh figs, preferably Black Mission, chopped into 3/4-inch pieces
  • 1/3 cup red wine
  • 1 tablespoon balsamic vinegar, or to taste
  • Pinch of salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 teaspoon sugar
  • 1 sprig fresh thyme

Instructions

  1. Combine all ingredients with 1/2 cup water in a small saucepan. Cover; bring to a boil over high heat. Reduce to a simmer; cook, partially covered, until fruit has broken down, 20 to 30 minutes.
  2. Let cool slightly; remove thyme sprig. Press mixture through a large-holed sieve with a rubber spatula.

  • 1 cup mayonnaise
  • 1 cup sour cream
  • 2 tablespoons dried parsley flakes
  • 1 tablespoon dried minced onion
  • 2 teaspoons dill weed
  • 1-1/2 teaspoons seasoned salt
  • 1 teaspoon sugar
  • Fresh vegetables or potato chips

Instructions

  1. In a small bowl, combine the first seven ingredients. Chill for at least 1 hour. Serve with vegetables or potato chips.

Cranberry Sauce

Ingredients

  • 1 cup (200 g) sugar
  • 1 cup (250 mL) water
  • 4 cups (1 12-oz package) fresh or frozen cranberries
  • Optional Pecans, orange zest, raisins, currants, blueberries, cinnamon, nutmeg, allspice.

Instructions

  1. Rinse cranberries: Place the cranberries in a colander and rinse them. Pick out and discard any damaged or bruised cranberries.
  2. Boil water with sugar: Put the water and sugar in a medium saucepan on high heat and bring to a boil. Stir to dissolve the sugar.
  3. Add cranberries, cook until they burst: Add the cranberries to the pot and return to a boil. Lower the heat and simmer for 10 minutes or until most of the cranberries have burst.
  4. Stir in mix-ins if using: Once the cranberries have burst you can leave the cranberry sauce as is, or dress it up with other ingredients. We like to mix in a half a cup of chopped pecans with a few strips of orange zest.
  5. Some people like adding raisins or currants, or even blueberries for added sweetness. You can also add holiday spices such as cinnamon, nutmeg, or allspice. If adding spices, start with a pinch of each and add more to your taste.
  6. Let cool: Remove the pot from heat. Let cool completely at room temperature, then transfer to a bowl to chill in the refrigerator. Note that the cranberry sauce will continue to thicken as it cools.

Ingredients

  • tablespoons coconut oil
  • 5 tablespoons coconut flour
  • 1 ¼ cups water, beef or chicken broth
  • 1 teaspoon salt

Instructions

  1. Heat coconut oil over medium heat until it begins to slightly boil. Add coconut flour all at once and stir constantly until dark brown – be careful not to burn it. Add water or broth all at once and bring to a boil using a whisk to combine the mixture into a smooth consistency. Cook at a low boil until desired consistency. Add salt and stir until oil is well mixed.

Ingredients

  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 ribs celery, chopped
  • 2 teaspoons vegetable oil
  • 2 large turkey wings
  • 2 tablespoons cold water
  • 10 cups cold water
  • 4 sprigs fresh thyme
  • 3 tablespoons butter
  • 1/2 cup all-purpose flour
  • salt and ground black pepper to taste

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Combine onion, carrots, celery, and vegetable oil in a large roasting pan and toss to coat. Place turkey wings on top of vegetables
  3. Cook until the turkey wings are browned and vegetables are caramelized and softened, 45 to 60 minutes.
  4. Transfer turkey wings and vegetables to a large stockpot. Place the roasting pan over a stovetop burner on medium heat. Pour 2 tablespoons cold water into the pan and bring to a boil, scraping up any browned bits. Transfer mixture to the stockpot and add 10 cups cold water, thyme, and garlic.
  5. Bring turkey wing mixture to a boil. Reduce heat to low and simmer, uncovered, until meat falls off the bone, about 3 hours. Skim off turkey fat throughout the process and set aside 2 tablespoons.
  6. Strain turkey stock and reserve 6 cups of stock; discard all the solids.
  7. Heat butter and 2 tablespoons reserved turkey fat in a large saucepan over medium heat. Sprinkle in flour and cook, whisking continuously, until it begins to smell like cooked pie crust, 2 to 3 minutes. Slowly pour in turkey stock, whisking continuously. Increase heat to high and simmer until thick and warmed through, about 5 minutes. Season with salt, black pepper, and cayenne pepper to taste.

 

Teriyaki Sauce

  • Sauce:
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons sweet rice wine
  • 1 tablespoon, plus 2 teaspoons brown sugar
  • 1/4 cup sugar
  • 1 1/2 teaspoons minced garlic
  • 1 1/2 teaspoons minced ginger
  • Glaze:
  • 1/2 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. To make sauce: Combine ingredients in a saucepan on medium heat until the sugar is dissolved.
  2. To make glaze: Mix 1/2 tablespoon cornstarch with 1 tablespoon water. Heat sauce on medium high heat and add cornstarch water mixture. Simmer until thickened.
